The farm factory Nuzzo, handed on from at least three generations, represents the vocation and industry of olive farmes mouladed throughout ages of agricultural traditions and with a genuine love for the land they live in. This strong link with the territory i s kept on living with tenacity, and though a growing experience, so they look at the future a vivid way of life. In the deep south of the Salentine Peninsula the farm factory Nuzzo administrated mainly by family management covers an extension of about 30 Ha in the triangle of Otranto, Gallipoli, Santa Maria di Leuca where the silver green landscape of the olive trees slopes down as far as the sea. PRODUCTION
The moment of the harvestis of a crucial importance to the final product so the good qualità of olive oil mostly depends on it.
The olives picking is made in the open air fields by means of farm machines of the last, innovating, technology, such as: the farm olive-shaker which grants a total detachment of the drupe from the tree, withour causing any damage to the olive plant or the olive fruit.
Later on, the olives will be brought to the household-mill for the final process of working . In order to obtain always a good quality production, granted to the consumers, this operation takes over within 12 hours since the time of picking up.
– DARK GREEN FRUIT-FLAVOUR
Extra Virgin Olive oil of intense green colour, fruit-flavour a light sensation of spicy or hot chilly taste, this taste Is the essential feature for a goot extra- virgin olive oil.
The olives are picked up at the very moment when changing of colour starts to appear and theprocess of ripening begins; during this period the browinish black colours blush out on the green olives skin. From here, it follows the typical dark green colour and its lively taste.
– BRILLANT GOLD
Extra Virgin olive oil of golden color and sweet flavor, delicate for every taste, mild fruit flavor.
The olives are picked up in their full ripening time but they are always picked up from the trees. This choice to leave the olives furthermore on the trees, gives to this kind of olive oil its classic golen colour and its particular sweet flavor.
